This is one of my husband's favorite desserts. It's so easy - you can whip it up in the blender in no time, and there's no crust. Since I like to make my pie crusts from scratch, that's a big time saver.
• 2 c. milk
• 1 c. sugar
• 4 eggs
• 1/2 c. all purpose flour
• 6 tbsp butter
• 1 tsp vanilla extract
• 1/2 tsp salt
• 1 c. coconut
1. In a blender, combine first seven ingredients for 10 seconds; scrape sides and blend another 10 seconds.
2. Add coconut and blend for 2 seconds.
3. Pour into a greaded 10 inch pie pan.
4. Bake at 350 for 50-55 minutes, until a knife inserted near the center comes out clean.
