I got this recipe from someone at my job and just tried it this past week - it was a huge hit at our house!
• 2 lbs frozen hash browns
• 1/2 cup melted butter
• 1 can cream of chicken soup
• 16 oz. sour cream
• 1/2 cup finely chopped onion
• 2 cups shredded cheddar cheese
• 1 teaspoon salt
• 1/4 teaspoon pepper
• 2 cups crushed cornflakes
• 1/4 cup melted butter
1. Defrost hash browns.
2. Combine next 7 ingredients and mix with hash browns.
3. Pour into casserole dish.
4. Saute cornflakes in butter and sprinkle on top.
5. Cover and bake at 350 degrees for 40 minutes.
