Save Time in the Kitchen With Meal Planning
I love to cook, but when life gets crazy, cooking can quickly become just another chore. Years ago, I started planning our menus week by week, and found that it saves hours of work and lots of money. It may seem overwhelming at first, but it's not as hard as you think. Here are a few steps that will get you started:
1. Plan menus using your calendar.
I always have my day planner (a.k.a. my brain) open beside me as I plan menus. I can see which days I work late, when my husband has meetings, or when my kids have activities and plan accordingly. The days I have more time are the days I cook more complex meals. On the busy days, I find quick and easy meals.
2. Make your slow cooker your best friend.
The slow cooker is a working mom's best friend! Turn it on in the morning, and you come home at night to a hot meal - just add a veggie or a salad, and dinner's done. I use mine at least once a week, often twice a week. There are so many fantastic recipes for slow cookers! My resource page lists some of my favorite sites.
3. Plan for leftovers.
Plan some meals that will provide leftovers - one meal will then stretch to two. Soups and pastas are great for this! Taco soup is one of my favorites - not only does it make a huge meal, but it freezes well, too.
4. Post your menu.
Keep a copy of your menu handy - post it on the fridge, keep it in your planner, or put it into your phone. That way you'll be able to find it quickly.
5. Use your menu to plan your shopping trip.
Once your menu is done, you can plan your shopping list around it. Check your pantry to see what you have and what you need, and within a few minutes, you have a list ready. You can save money by buying only what you need and save time by not having to run to the store every couple of days for something you forgot.

Simple Joys
This week has been crazy busy as we change over to a new software program at work. Honestly I think of my simple joys this week should be that the weekend is finally here! It's been a good week, though. I'm so glad to have you linking up to Simple Joys this weekend!

Life With Boys
I've learned a lot from raising two boys. They're young, but we've already had so many adventures (and disasters). Here are some of the lessons we've learned so far...
- When you tell your five year old to take a shower, it doesn't mean he's taking one - instead you may find him in the living room, playing Wii...naked.
- Boys don't require soap for showers (Learned when cleaning the bathroom, realizing there's no soap in the their shower, and realizing that it hasn't been there for a week)
- When you're traveling and your child says, "Mom, my tummy hurts," it's already too late.
- When boys are fighting, "You wear a bra" is one of the worse insults they can say to each other.
- Kool-Aid punch can be a discussion starter for five year olds - "It looks like blood...boys just like talking about blood and stuff."
- Eight years olds are tramatized by seeing their mom folding her underwear (His exact reaction was, "Mom - ugh," followed by a shudder.)
- Boys have surprisingly large vocabularies, which include words like "hostage" and "assassinate" (I wonder sometimes if we're watching too much Star Wars at our house.)
- It is perfectly logical for a mom of boys to yell across the house, "Put your pants back, stop hitting your brother with underwear, and put the underwear back where you got it!"

Call it what you want...
I'm not sure what the best term for it would be... Driven. Type-A. Focused (sometimes to a fault). I'm not good at decision making, but once I do make up my mind, it becomes my sole
In some ways, it pays off. College is a perfect example. I had one episode right after my first anatomy and physiology test where I wanted to quit (even though I got an A on the test). I was overwhelmed and terrified. But that was the only time I really thought about giving up. I've questioned my sanity...a lot. But I'm more determined than ever that I want this. I can't wait to walk across that stage and get my degree.
In other ways, its really, really bad. Like when people talk to me and I walk right by, never hearing them, because my mind is a million miles a way. Or when I'm pulling straight A's in college, but I would die a thousand deaths from humilation if anyone saw the way my house looks during finals week.
For better or for worse, though, that's me...

A New Project - Gratitude
I've been working on several projects lately - some small, some big, all things I want to accomplish before I start back to college in July. I seem to always have a list of ongoing projects, but I'm serious about wanting to get these done.
One of them is my gratitude journal - my 1,00 gifts journal. So this week, instead of doing a big blog posting, I decided to work on a new page for the blog instead - my 1,00 gifts page. I hope you'll check it out. I'm amazed at how much my attitude has changed since I started this project. When we take the time to be grateful for the little things, we realize just how blessed we are.

Thankful for Being Thankful

Okay, I know that sounds crazy, but it's true...when I started reading A Holy Experience, it really challenged me. One of the areas it challenged me in is gratitude. I decided to start keeping a gratitude journal - my own book of 1,000 gifts. I just started it last month, and I'm already amazed at how much that little book is changing me.
When you take time to look for things to be grateful for, you realize just how how much you have. I'm so amazingly, abundantly blessed. There are so many little things that I take for granted every day. Writing it all down makes me stop and think about things I might otherwise overlook. So, I'm thankful for learning to slow down, enjoy the little things, and be thankful.
A little redecorating...
Welcome to Working Mom Wednesday! One of today's prompts is about sharing your life in pictures. I've been snapping lots of random pictures lately, because we've been doing some decorating in our house. Our house flooded in the storm surge of Hurrican Ike in 2008, and we had to pretty much start from scratch. Remodeling took months, and redecorating has been an ongoing process that we're finally wrapping up.
Our big project has been finishing out the kitchen and dining area, and we've done some work in the living room too. Here's what we've been doing...
The perfect red chair for the living room! We searched for that chair for months.
The sign we found at Hobby Lobby - it's perfect for our bistro/coffee house look.
One wall of our dining area - Hobby Lobby was sold out of "love," so I have to go back for it and we'll put it at the bottom. (We got really silly putting this up, saying our hopes are too high, we're living too low...everything is funny when you're stuck at home because of winter weather!)
The other wall of our dining room, and our table...both the picture and the flowers are more great Hobby Lobby finds.
As awful as the flood was, we have really enjoyed getting to remodel our house. This is the first time in our married lives that we've gotten to redo everything and make it totally our own.
Now, I can't resist posting the pic of us bringing that picture above home...we found it on sale for half-price at Hobby Lobby, and we thought it would fit in the trunk...it didn't. So my kids had to ride back home - a 30 minute drive - with the picture in the back seat. Let's just say they weren't happy campers...

Faith and Fitness
A lot of my goals for 2011 involved two major areas - faith and fitness. These seem to be at the top of a lot of people's lists. I think it's because most of us struggle with them so much. They are also two of the most important goals we can have. I often tell women at the gym I manage, it's not selfish to take time to take care of yourself, because we can't give what we don't have.
I think that what makes these goals seem hard to reach is that neither faith nor fitness just happen - both require us to be intentional. We have to make time for them and make them a priority. We have to have discipline to work toward these goals. In a lot of ways, these goals are very similar, and I've found a lot resources recently that combine the two. Here are a few favorites that I'm incorporating into my daily routines...
PraiseMoves
Years ago, in high school and college, I tried yoga and loved it, but as I started learning more about the background of it, I just wasn't comfortable with it anymore. Then I found PraiseMoves. PraiseMoves is a Christian alternative to yoga. The creator tells about her yoga background and how she came to start this new workout on her website. She has several DVD's available. You get a great, relaxing workout, while praying, meditating on God's Word, and memorizing scriptures. You won't be disappointed!
Fit Bands
I just won a Fit Band (thanks Julia!) and I can't wait to get it! I thought this was such an awesome idea. Fit Bands are wristlets you can wear during your workout - you can attach Fit Cards to them so you can pray, memorize scriptures, and have devotional time while you work out. It will be perfect for those time-crunched mornings that I know I'll have when I (hopefully) start dental hygiene school this summer.
Audio books/podcasts are perfect to listen to as you work out. I have a playlist of some of my favorite Christian songs (Third Day, Superchick, dcTalk, etc.) that I sometimes listen to as I work out, but I never thought about the podcasts. I plan to download some from my favorite teachers and listen to some as I run.
I'm really excited about the goals I've set for myself in the areas of faith and fitness. I've even more excited as I see how I can work towards both at the same time and as I see the progress I'm making. My husband is joining me in some of my fitness goals, so I'm excited to have him on board as an accountability partner in this.

A Bad Rap for Social Media?
Before I start today...I'm so excited to be guest posting today for the very first time! You can check out my post at one of my favorite blogs...please stop by and check it out!

I saw an interview recently with a mom whose family gave up all technology for six months because the mom felt that they were all too attached to it. I understand where they're coming from, but I can't help but think that's looking only at the bad side of technology. I hear people talking often about the evils and dangers of social media. While I see their point, I also feel that social media and technology get a bad rap. The good points of it are all too often overlooked. Social media has been a huge benefit to me in so many different ways...
- Our family is scattered throughout the country, ranging from six hours to fourteen hours driving distance away from us. Thanks to Facebook, we can keep up with everyone in one place. Sure, I'm on it pretty much every day, and yes, I probably spend too much time on it...but I'm able to stay connected with my parents, sisters-in-law, brothers-in-law, neices, nephews, cousins, friends...you get the idea. There are a lot of people to keep in touch with!
- I have found so much spiritual encouragement thanks to the internet! From Bible studies to inspirational ideas to accountability groups, you can find it all online. Just this year, thanks to blogs and Twitter, I've started keeping a gratitude journal, memorizing Ephesians, digging into Bible study, reading through the Bible in a year, and getting up early each morning for quiet time and exercise. I've also found accountability groups and discussions to help me stick with it all.
- There are so many great resources available through social media - ideas and resources for fitness, time management, organizing, recipes, and more. Just take a look at my resource page and you'll see what I mean!
- Support is everywhere! Three and a half years ago, as a new working mom, I was stressed out and overwhelmed. I desperately needed to hear from other moms who were in the same situation. I needed to know that guilt is normal, that it takes time to adjust, and that you can find a lot of joy, even if you're not in the situation you'd hoped for. Thanks to Twitter, Blog Frog, and other sites, I found that support, and now I hope to help provide support with my own blog.
