This week, I'm trying to simply things a little. I realized last week that I've been to ambitious when it comes to cooking and juggling everything else that's happening in my life. I thought I would feel like spending more time in the kitchen, and I also thought I'd have more time to relax and cook - I don't. By the time I work and go to school, then get home to studying and housework, I just don't have the energy to spend a lot of time in the kitchen.
I've been using my slow cooker once a week - now I'm moving up to twice a week with it. I'm also picking up some emergency quick fix meals for the nights when dinner plans fall through or leftovers don't go as far as expected - chicken nuggets and canned ravioli may not be the healthiest choices, but it'll be better than fast food.

Saturday Dinner: breakfast casserole

Looks like you have a great menu this week! I saw the Baked Potato Soup recipe on that blog, haven't tried it though but it sounds tasty!
You are so organized! Good job. I should really start menu planning it would save me so much time!
I think I'm going to need to work in slow cooker stroganoff for this week!
