My family loves this easy, one-dish recipe. Best of all, it tastes even better left over, so you can make it ahead of time and warm it up when you're ready to eat!
- 1 lb. ground beef
- 1 pkg. Lipton Spanish rice
- 1 can chili beans
- 1/2 lb. shredded cheddar cheese
- 1 can cheddar cheese soup
- tortilla chips, crushed
- Brown beef and drain; while it is cooking, prepare Spanish rice according to package directions. (OK, it's a two dish recipe.)
- In a large skillet, mix beef, rice, beans, soup, and 1/2 of the shredded cheese.
- Top with crushed tortilla chips and the remaining cheese.
- Cook until heated through and cheese on top is melted.
